I am a founder of mEKtO made in Sweden. I am a raw/vegan chef. I have experienced how a raw food diet can heal and how awareness surrounding your food is important for your health and wellbeing. I have been teaching for 10 years in plant-based food. I am a certified holistic raw/vegan chef and I have graduated from the best school in the states. I am also a writer, recipe developer, food creator, a certified nutritionist with specialization in sports nutrition and sugar addiction, certified director of CBT Stahre´s method in eating disorders and addiction, certified allergy- and health tutor and health motivator. I also have a masters degree in information science, library science, and literature. This year I am starting up online courses to educate raw food chefs so that they can get their certification and work as chefs or writing book, having lectures or just to improve their health. What was the moment you realize that you wanted to go vegan?
When my son (12 years ago today) was diagnosed with coeliac and I started thinking about what we eat. I studied a lot and realized that vegan food was the right food for us.
How long have you been Vegan?
For 4 years.
Why is being Vegan important to you?
Processed food can cause cancer, it´s bad for the environment, the animals should not be treated as food because vegan food is so good and a lot of heart diseases are caused by eating meat.

Do you have a favorite movie or videos or your own media that you want to share?
I just started an online course to certificate raw food chefs and health motivators. I have all the info on my website www.mekto.se and a very short Youtube video here.
Do you actively promote veganism? How? Please share any stories you would like.
I am having classes, courses and lectures all over Sweden where I am talking about it, making food on fairs for people to try and learning them how good it is to eat healthy and vegan,
What is your favorite Vegan stereotype? If someone asks you a question about it, how do you respond?
Because I don´t eat sugar, gluten, food with a lot of starch and vegan food people always say: “Oh my God! You can not eat anything!” My answer is of course that I eat consciously, better food and healthier than they do. And I give them some examples of vegan recipes. I also make recipes for a vegan food store In Sweden so every week I do a new and easy recipe for people to get inspired.
What’s your favorite Vegan restaurant?
We don´t have any pure vegan restaurant in Sweden – just raw food restaurants so it is hard to say.
What’s your favorite recipe? Please share it.
I have a lot of favorite recipes so it is hard to share only one but here is one from my latest book called “BAKA VEGO – Veganska recept” in Swedish.
A long time ago I got the inspiration for this dish from a blog – I do not remember the blog, or what the ingredients were but I improvised and tried to remember the flavors.
1 dl soaked sunflower seeds
2 dl sprouted chickpeas
1 red onion
3 cloves garlic
½ dl tahini
1 dl filtered water
juice of ½ lemon
½ dl chia seeds
2 tsp coriander seeds
2 tsp cumin
1 tsp turmeric
1 tsp ground black pepper
1 tsp herb salt
Roll the balls in sesame seeds and refrigerate.
2 cups mandolin (or finely chopped) red cabbage
2 cups mandolined (or finely chopped) red cabbage
4 mandolinanded (or thinly cut carrots)
4 mandolinade (or thinly cut carrots)
1 spiritulized cucumber
1 spiritulized zuccini
juice of 1 lemon
a piece of raw squeezed ginger
some cold-pressed olive oil
juice of ½ lemon
½ cup tahini
½ dl sesame seeds
2 cloves garlic
½ dl filtered water
1 teaspoon herb salt
Mix everything in a blender.
Serve and Enjoy!
What is the one big stereotype you hear about Vegans that you want to dispel?
That we are whimsical – we´re absolutely the opposite.
Some encouraging words for new Vegans?
Look at my website – you can find a lot of inspiration there. When you´re out in a restaurant don´t tell them what you can not eat but tell them what you can eat and they will gladly help you prepare a tasteful dish! Always have a bar and some nuts in your bag – just in case.

What is the toughest Vegan item to find that you need? Toothpaste, Deo, glue, etc..
None, I have a store that has everything and I make my own deo, toothpaste etc.
Talk about a time when you struggled with your Veganism?
The only thing that was hard for me giving up was cheese and eggs. I still get cravings after eggs but do not eat them of course. The most difficult part was getting the family to eat all vegan – but now they do.
