This raw apple pie is definently one of my favourite desserts (yes I know I have a lot of favourites, but that is OK). I learned how to make it from my rawfood teacher who is an expert on desserts! I modified the recepie a little but it still has her touch too. We usually make this pie when we want to cozy up in front of the tv and watch a movie. The pie isn’t big but it definitely serves 8 persons. I always make the pie with Granny Smith apples, because of their slight tartness. The cake has a lot of dates, and the apples prevent it from getting too sweet. And with the Whole, Wonderful Walnuts…what can I say it just tastes amazing! You really have to try it to understand what I’m talking about. And it’s a super easy recepie.

Raw Apple Pie with Walnuts

8 portions

Process the first three ingredients in a food processor for about 10 minutes. Press into a pie dish. If you want to, you can put the crust in a dehydrator for about 10 hours (I always do) but you can go directly to step 2. Process the dates, zest and cinnamon in a food processor. Then combine all the remaining ingredients in a large bowl. Blend it well. Put everything in the pie crust and press it down a little bit. Slice the apple thinly with a knife or a mandolin slicer and decorate the pie with the apples and whole walnuts. Put the pie in the refrigerator for at least 2 hours before serving. I always serve mine with a delicious raw vanilla sauce.
